I like to rub ribs with seasoning.., but wait to add brown sugar until the last 2 hours of smoking..
The sugar doesn’t get burned… and it gives them a sticky candied like exterior. Most people don’t even want any sauce with them!
edit to add… I also drizzle them with hot honey some times for a little extra kick.
