Anyone have experience/tips on using a smoker box in a grill?

So, out of all the cooking gadgets I actually DO have – which covers a LOT of ground – I don’t have a smoker. It’s a bit of a long story, and really not all that interesting anyway.

I was gifted a smoker box over the holiday. Its a steel box about the size of a pencil box you’d use in elementary or whatever.

Apparently all you do is light your pellets/wood, place it between the burners underneath the grates … and that’s it? It leaves me with a ton of questions, though.

  • What temp am I going for, and how do I maintain that consistently when the grill lid will be (presumably?) closed? FWIW it’s a propane grill, if that matters.

  • Will I ever need to replace the pellets/wood for fresh stuff during a cook?

  • What limitations am I looking at in general here?

My father in law is going to bring me a big metal barrell soon since he uses that for himself … that one is going to be a whole other set of questions.

Any tips would be greatly appreciated.
