I’ve done a lot of line dancing with a group of largely Taiwanese ladies. Most often they are cordial, deferential, patient. There are some status and heirarchal things going on that I don’t quite have a handle on, but when they have a complaint or feel injustice of some sort, you’re going to hear about very clearly, even if you don’t understand all the words. They don’t do passive aggression.

I mess around with stir-fry a lot, but if I want to make sure it’s right, I’ll stir-fry with teriyaki marinated chicken with the usual suspect vegis plus maybe kale, red cabbage, cashews or at the last moments good mango. Just OK mango doesn’t cut it. I’ll often use Passage To Asia and Passage To India sauces for a base and add oyster, chili, hoisin, soy according to feel/experience. I almost always mix it with brown rice before serving. Edit: Oil must include some sesame oil.
