Bah, spam is delicious. Do you not like jerky? Ham? Bacon? It’s like all of those rolled into one. I think it gets a bad rap cause of the can. Spam fried rice is at a bunch of fancy restaurants now, I had some kimchi spam fried rice at a restaurant in Houston a few years ago that was to die for.
Now Vienna sausages… those are pretty gross.

I made it in Hawaii earlier this month, and had Spam Musubi (overrated) and a spam dish that was really not too bad while there at a luau.
It’s a blank canvass, so there’s that, but it’s a little fatty for me.
I will probably do a spam wonton nachos here soon, but it’s supposed to be poke. (Scallions, sliced fresh jalapeno, red onion, sriracha mayo and eel sauce, white and black sesame seeds and lime juice)

So Mike is an old hippie,(BTW, there are no young ones), and I have an educated guess as to how he thinks his recipes up. His restaurant was cool, you literally walked thru the kitchen to get to dining room. It was reservations only and the menu changed daily. You could bring your own wine and there was no cork fee, he also allowed beer but no liquor. He’s a legend in these parts and most people aren’t even aware of the spam awards. He had an article from the Des Moines Register on the wall that kept track of his multiple wins and if you stuck around at close and helped bus the tables he’d tell you all about it.
It’s all yours buddy. I ate it a few times in korea. It’s not bad in Budae Jjiggae. But that’s cause the broth is so good. It’s the texture that kinda grosses me out to be honest.
@Tmanqz should move to Korea. They literally give each other Spam Gift packs for Korean thanksgiving. No joke.
Spam is big in Hawaii, a common dish for sure and like you said they serve it up multiple ways

Yeah, these days I find it best in a fried rice type of format, one of many ingredients rather than the main one. It’s very tricky to balance the fat/salt when it’s served in whole slices.

I once invited a few friends over for a dinner in which Spam was a component in every dish. I didn’t serve dessert, so that made it slightly easier. Somehow, all of the survivors are still friends…
