Spam makes a comeback

  4. Potato Starch – Acts as a binder, helping the meat maintain its shape and slice easily.

  5. Sugar – Balances the savory flavor and contributes to the browning effect when cooking.

  6. Sodium Nitrite – A preservative that inhibits bacterial growth and prevents spoilage.

I just made a fried Spam sammich with Mayo(Dukes)- Tomato and Lettuce on toasted sourdough bread. Wow its Amazing.

Anyone else like Spam or am I just nuts.

I love it, though due to dietary restrictions I don’t get to eat it very often. I was actually reintroduced to it, after eating it a lot as a kid, through Korean food. They love the stuff over there.

I have known Mike for years, his spam recipes are incredible. He lost his restaurant during COVID and went to work doing specialty events that almost always include a spam dish on the menu. I can’t remember how many national spam awards he’s won but he’s the real deal. He pretty much runs the show for events at Legacy Acres, a hunting club owned by former NFL center Austin Blythe and a partner that I can’t recall at the moment.
