Using koji rice marinade to mimic dry age effects

Has anyone ever messed with koji rice?

I just got some after seeing this video from America’s Test Kitchen and wondered if anyone out here has tried anything similar.

Haven’t tried it but America’s Test Kitchen does a great job. One of my favorite shows and I have a few of their books. Hopefully the funding cuts to PBS don’t take it away permanently.

We don’t use the powder to mimic dry aging so I can’t help with that. But at my shop we use shio koji and shoyu koji to marinate our chicken and tofu. The people love it.

We take the dry koji rice and blend it with water and salt (or shoyu) and make a marinade with a nice funk, slightly sweet, slightly salty.

Shio koji is actually what I’ll be doing with it, so I am super stoked to hear that input!
