My wife and I honeymooned in Italy 20 years ago and went to Modena. We toured a couple places and saw how THEY produce it. They showed us barrels of various ages (1 year, 3 years, 5 years, 10 years, 15 years and 20 years etc.) and the barrels got smaller every time because of evaporation. They would pull samples and the flavor got more aromatic and intense as the age increased…and worth more money. The older ones were SIMPLY AMAZING.
We saw one barrel over 30 years old.
It mind blowing to think that some of the one year old barrels we tasted on our honeymoon might still be aging
