so with all that talk of food I figured why not see what everyone is making that is low/no carb.

I’ll start with my pizza.

2 heaping handfuls of shredded moz cheese
4 oz cream cheese.

melt those in a microwave for a minute, take them out and mix them up best you can, then nuke again for another minute.

when done take a cup of almond flour and some italian seasoning (to taste) and mix that all in.

Press that out on a pizza stone or whatever you like to use. Bake 10 minutes at 400 degrees. take it out, if you want it crispy on both sides you could flip it (be careful, it is cheese after all) and then put your toppings on it.

my toppings generally are tomato sauce with italian seasoning in it. if I want some spice I’ll mix in some ghost pepper powder, some extra garlic, etc. then mushrooms and pepperoni and sausage and a handful of shredded cheddar cheese and more shred moz.

then bake that another 10 minutes at 400 and it’s done.

you’ll be surprised how crustlike this crust is.

it’s pretty low carb but definitely not low calorie really. But super filling.

Keto ice cream: I use powdered or granulated allulose instead of sugar. Can’t use erythritol, as it turns the ice cream into a hardened chalky block; allulose preserves the texture. I don’t do the fancy custard style, just whip something up real quick with the Cuisinart Ice Cream Maker and churn for 30 minutes before transferring to a freezer-safe container.

  • 2.5 cups heavy cream
  • 2.5 cups half & half
  • 1 cup allulose
  • 1/2 tsp salt
  • 2 Tb of flavored extract
  • 1 cup mix-ins (if required)

For flavoring I’ve been using Olive Nation extracts. Peach, Orange, Mango, Lime, Cherry, and Caramel (surprisingly) have all been great. I use a few drops of food dye for color. For pistachio ice cream I use a mix of Almond and Coconut flavoring (3:1 ratio) and a cup of chopped pistachios. For butter pecan, I use Vanilla extract and mix in a cup of chopped pecans that have been sauteed in butter and salt until they’ve just started to get hot (very important not to let it burn).

oh that sounds interesting. Honestly I’ve just been using zero sugar cool whip (or the generic meijer version, which is creamier) and freeze that and it’s similar to ice cream.

the version you posted honestly seems like it’s almost 0 carb.

There’s about 42 carbs in the whole half-gallon. A reasonable serving might have 5 carbs, as dairy products do have a little bit of lactose to account for.

ah yes I didn’t take into account the carb/calorie ‘accounting’ that they do. basically round down the carbs per serving :slight_smile:

Yeah, that per serving number can make it look like there’s no carbs when there actually is, especially when being gluttonous.

That pizza of yours looks like it has about 50 carbs all told.

yep, but per slice it’s SUPER reasonable compared to a regular pizza.

Copycat McDonald’s Breakfast Burritos

  • 4 keto tortillas** (8" “soft taco” size)
  • 6 large eggs
  • 2 Tbsp half and half
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 8 oz italian sausage
  • 1/3 cup onion, VERY finely diced
  • 1/3 cup green bell pepper, VERY finely diced
  • 4 slices American cheese (or 4 cheese singles)
  • 1 Tbsp butter (for eggs)

Dice the onion/pepper super small—like 1/8" bits.

Cook sausage. I wait until the sausage is almost done then put in the onions to caramelize a bit. then right at the end add in the peppers to cook them but not ruin them.

  1. Whisk eggs + milk/water + salt/pepper
  2. In a nonstick pan, melt 1 Tbsp butter on low.
  3. Pour eggs in and stir slowly and constantly with a silicone spatula.

For each burrito:

Lay 1 slice American cheese in the center.
add egg then sausage mix.

you could ‘steam’ them or nuke them but they came out perfect this way, imo.

My go to keto meal is simple but tastes great.

Dice red onion and fresh garlic simmer in butter

Then add 1 pound medium ground beef

Hit it with salt, pepper, paprika, crushed red pepper

Add a full size tomato, cut it up into 6 or 8 pieces throw it in after the ground beef has browned a bit

Let that cook on medium for a few minutes

Then add a couple eggs, mix it up well and cover with shredded cheddar cheese. Cover with lid and let it melt.

It’s ready!

Add sour cream for next level.

Oh and use stainless steel or cast iron. None of the non stick cancer creating frying pans.

My go-to is to just use the keto tortillas as a pizza crust, especially when I’m in a hurry.

Put toppings on and bake for several minutes at 450. Perhaps not a perfect substitute, but it scratches the itch for me.

Plus, it takes longer to take out the ingredients and put them away than it does to cook. If I start the oven pre-heating, I can usually get my pizzas constructed by the time it’s up to temp. By the time I’m done putting everything away and tidying up the kitchen, they’re ready to eat.

Another classic is Keto Baked Buffalo Wings

Get a baking sheet. Throw 30 or 40 wings on it.

Hit it with olive oil, salt, pepper, garlic power, paprika.

Set the oven at 400 degrees. Cook for roughly 40 mins. You want them to get nice and crispy.

Then in a small pan add 500 ml’s of Frank’s Original Hot Sauce and a good amount of butter. Heat that up on low.

When the wings are done toss the wings in a big bowl with the Buffalo sauce!

It’s amazing. Also works great with chicken thighs.

OK not to be a smart ass but aren’t Buffalo wings already Keto “friendly”? Why do we have to add the Keto name in front of it?

I like to make ‘taco cake’ with those in springform pans. or you could call it taco lasagna I guess. a keto tortilla, then put cheese meat and refried beans onions etc and build layers with that and bake in the oven. comes out great.

You are right. But a lot of people add shit to wings that make them pretty unhealthy in a hurry

Or they fry the buffalo wings in unhealthy oil. I prefer baked over fried

Oh definitely they do, I smoke my wings. But I am not a Keto person, but I do stay away from refined processed carbs. Mostly just complex carbs from fruit, veggies and whole wheat. standard stuff

A couple great bread substitutes:

If you want a sweet treat that isn’t “that” bad for you. Use at least 70% Cocoa Dark Chocolate, one or two squares, add some peanut butter and top with cashews. Great sweet snack that is better than a lot of other options.

I like the EggLife wraps, used them with smoked lamb chunks and homemade tzatziki.

For wings, I concur with Joey Diaz – gotta have ‘em crispy with bleu cheese dressing, with a dash of Tapatio.

I like jane_does ice cream recipe, it’s probably actually more 'ice cream’ish. My super cheap version is a tub of 0 sugar cool whip and then a box of 0 sugar jello mix. You can add some whipped cream cheese to make it a bit richer but I’ve used the cool whip then 0 sugar cheese cake mix and it’s pretty darn good. add 0 sugar chocolate syrup or there’s a strawberry syrup that’s really good too.
